Beef Stroganoff

Ingredients:

250g Lean Beef Chunks

2 Onions

200g White Mushrooms

150g Portobello Mushrooms

1 Can Plum Tomatoes

150g Single Cream

1/2 tbsp Thyme

1/2 tbsp Smoked Paprika

1/2 tbsp Taragon

1/4 tbsp Soumak

One of the big classics of global cuisine; the all time great Beef Stroganoff. I decided to put a small Greek twist to it by adding a touch of tomato do the dish to remind me of another Greek classic κοκκινιστό μοσχαράκι (google that and you will thank me later!). So, let’s see how its done:

1). Start off by finely chopping the onions and mushrooms and set aside. Continue by slicing the beef into thin strips. The thinner you cut them, the less time they need to cook so keep that in mind.

2). Make a quick marinade for the beef: add Worcestershire sauce, thyme and salt/pepper to the beef. Mix well and leave even for just 5-10 minutes.

3). Heat the pan with olive oil and add in the onions. Cook until brown and add in the beef stiring well until the beef has colour all around. Then add the mushrooms and cook until they the water from the mushrooms has evaporated.

4). Add in a cup of red wine and let that cook for about 5 mins or so. Continue by adding in the plum tomato and the spices. Mix well and leave to cook on medium-low heat for about 20 mins.

5). Just as the beef is ready, turn off the heat and mix in the cream as well as salt/pepper if needed. Serve with anything on the side; pasta, rice, mash, salad and just enjoy! I promise you this dish is simpler to make than it may seem..
