Vegetable Soup

Ingredients:

2 White Onions

2 Tomatoes

3-4 Carrots

2 Courgettes

1 Red Apple

1 Leek

1 Potato

2-3 Water

1 tbsp Sweet Paprika

1/2 tbsp Thyme

Salt/Pepper

This is probably one of the simplest recipes for vegetables. The great thing is that it is super cheap and the recipe can be made with virtually any leftover vegetables you have and don’t want to waste. Here is how it works:

1). Cut all the vegetables you will use; cut them roughly, there is no need to cut them finely as they will be blended.

2). Start by sautéing the onions to give flavour, followed by all the other vegetables your using. Stir them around for roughly five minutes.

3). Add the water, enough so it covers the surface of the vegetables and leave to boil gently for about 25 minutes. You will tell its ready when the potato is soft (which takes the longest to cook). Don’t forget the spices!

4). Once ready, use a hand-held blender and blend the vegetables well until you have a soft yet thick texture. Serve up how you like but I recommend a good amount of olive oil, its perfect!
