Greek “Spetsofai” w/ Sausages and Tomato Sauce

Ingredients:

1/2 cup Basmati Rice

1 Spicy Sausage

1 small cup Dry Red Wine

1 small cup Purified Tomato Juice/Puree

1 tbsp Paprika

1/2 tbsp Thyme

1/2 tbsp Ginger

1-2 Orange & Red Peppers

Method: Begin by cutting the sausages into decent-sized chunks (don’t worry too much about the size). Heat some olive oil in a frying pan over a medium-high heat. Add the sausages and cook until they are nicely coated all around. In the meantime, chop the peppers into short ribbons and throw them in with the sausages. Once these ingredients have obtained a nice color and the peppers have softened somewhat, add the red wine and increase the heat so as to burn off the alcohol. Once the alcohol has evaporated (after 2-3 mins), insert the tomato puree and spices. Reduce the heat to medium-low and let the mixture slowly cook.

Only add some water if the mixture is to thick. You’re gonna have to use your judgement there! Meanwhile, boil some water in a separate pan for the rice. Boil the rice for roughly 10 minutes, then drain and serve in a bowl. Once the rice is ready, the sausages should be ready too. Taste the mixture and add salt/pepper to taste. I recommend trying the rice together with the sausages. In other words, mix it all up, Greek style! Enjoy guys!
