Breaded Prawns w/ Coconut Milk Sauce

Ingredients:

200g Frozen Prawns

300g Breadcrumbs

6 Eggs

150ml (1 tin) Coconut Milk

1 Lime

1/2 tbsp Cumin Powder

Method: First, prepare the mixture(s) for the prawns coating. Take out three separate bowls. Crack the eggs into the first bowl, place the breadcrumbs along with salt/pepper in the second bowl and keep the third one empty (that is where the coated prawns will be placed temporarily). Before coating, remember to defrost the prawns up to 30 minutes before. For the coating, simply place the prawns first in the egg mixture, then in the breadcrumbs and shake off any excess breadcrumbs before placing inside the empty third bowl. Next, heat a frying pan on a medium heat with a touch of olive oil.

Once heated, add the coated prawns and cook until the coating turns a golden-brown color. That is your indication that they are ready. Meanwhile, in a separate saucepan, add the coconut milk and bring to a slow simmer (pan on low heat). Let the milk simmer for roughly five minutes before adding the cumin and lime zest. You may also use lime juice if you are a massive fan of limes! After another five minutes, mix the mixture, taste and then it is ready to serve. Our suggestion? Use a few toothpicks and just dip the prawns into the sauce and you will have yourselves a treat!
