Chicken & Sausage Casserole
Method: First, cut both the chicken and sausage into small chunks. Remember: the smaller the chunks, the lesser the cooking time. Place some olive oil in a large saucepan or frying pan over a medium-high heat. Once hot, add the chicken and continuously stir (so it doesn’t stick to the pan). Cook the chicken until it becomes beige towards golden in color on all sides. At this point, cut the pepper (how you like) and throw them into the pan. About five minutes later, add the sausages.
Let the ingredients cook for about 5-10 minutes before adding the red wine and slightly increasing the heat in order to burn off the alcohol. Five minutes should be enough for the alcohol to burn off. Then, add the tomato puree and some water, enough so it just about covers the surface of the ingredients in the pan. Straight after, add the spices and leave to simmer for about 20-25 minutes on a medium-low heat. When the time is up, taste and serve. Feel free to eat it as it is or with some rice or pasta.
