Mini Beef Sliders

Ingredients:

2 Onions

50g Bread Crumbs

150g Beef Mince

20g Rocket

A handful of Baby Tomatoes

1/2 tbsp Curry Powder

1/2 tbsp Sweet Paprika

1/2 tbsp Thyme

Salt/Pepper

For the Sauce:

1 cup Sour Cream

2 tbsp Regular Mustard

1/2 tbsp Smoked Paprika

Method: First off, place the beef mince in a large mixing bowl. Take out a blender and place the onions inside after having cut them into four so they fit easier. Blend the onions and add to the mixing bowl. Also add the bread crumbs, herbs and a few table-spoons of olive oil. This is where you get your hands dirty by mixing the mixture together very well. Don’t be shy with it! Once it’s been fully integrated, take a bit of the mixture in your hands and push it together and roll it in order to form a circle. After shaping it, lightly press it down to flaten it slightly (this will allow the sliders to cook quicker). Keep rolling until the mixture is finished and you should end up with as many sliders as you want.

Then, take out a frying pan, place it on a medium-high heat, add a touch of olive oil and once hot, add the sliders. Cook for 2-3 on each side depending on the desired temperature. Once cooked, remove from pan and place to one side to rest for about 10 minutes. Once all the sliders have been removed, use the same pan to lightly toast your slider buns.

As they are toasting, make the sauce. In a small bowl, place the sour cream, mustard, paprika and some salt. You can supplement with truffle oil (if available) but olive oil will work perfectly. Mix well and season with salt and pepper if necessary. Once the buns are complete, turn the heat off and start assembling your slider in any way you want using also the baby tomatoes and rocket.
