Fresh Chick Pea Salad

Ingredients:

1/2 cup Chickpeas

100g Iceberg Lettuce

1 Red Pepper

10g (or 7-8) sun-dried tomatoes

30g (1 tbsp) Capers

For Dressing:

2 tbsp Olive Oil

Juice from 1 Lime

1 tbsp Paprika

1 tbsp Mustard

1 tbsp Honey

Method: If you intend to use chickpeas that are not from a can, you will have to soak the chickpeas in water overnight so they are ready to be eaten the next day. Also, they will need to be boiled for around one hour.

To prepare the salad, finely chop the peppers and lettuce and throw into a bowl together with the capers and sun-dried tomatoes. Once all the ingredients are in the bowl, start preparing the dressing. In a bowl, simply mix the ingredients outlined above, mix well and add to the ingredients in the bowl. Make sure you mix the salad well so the dressing goes everywhere and that’s it! Super simple and we hope you like it!
