All-in-one Pasta Bake w/ Peppers & Tomato

Ingredients:

250g Spaghetti

100g Baby Tomatoes

Pack of 3 mixed Peppers

250g Tomato Passata

2 Spring Onions

5g Parsley

5g Black Olives

100g Ricotta Cheese

1/2 tbsp Sweet Paprika

1/2 tbsp Cumin Powder

1 tbsp Chili Flakes

Salt/Pepper

This recipe is very simple to make as all you have to do is put it all in one baking tray and let it cook. It is a great feast for plenty of people and does not require too much effort nor money to make. The steps are as follows:

1). Preheat the oven to 200 degrees celcius. In a baking tray, add the spaghetti first in the middle. You can break the spaghetti in half if necessary but try not to. Scatter around the baby tomatoes and the peppers cut into long strips.

2). Add all the spices, the tomato puree and a large amount of boiled water from the kettle. This boiled water will help the pasta cook while in the oven. Mix the ingredients well, cover with tin foil and place in the oven for 20-25 minutes.

3). While the pasta is cooking, finely chop the spring onions and parsley as they will be needed for when the dish is ready to serve. Once the time is up, remove from oven and firstly check that the pasta is cooked; al dente. If so, turn off the oven.

5). Serve the pasta with plenty of peppers, add the spring onions, parsley, olives and ricotta cheese (crumble it with your hands) on top as a garnish, they really do make a difference. That’s it! I hope you enjoy the dish!
