Potato & Leek Soup
Here we have a perfect winter dish, which while it is well-known, it never fails to impress! It is a simple recipe to follow and is very cheap. Here are the steps:
1). Finely chop all the main ingredients; onion, leeks and potatoes into think slices. Heat a large pan to a medium-high heat with olive oil. Ensure the olive oil covers the entire surface of the pan.
2). Once hot, add the ingredients one by one. First, start with the onions. Let them get golden brown before adding in the leeks and cooking them for five minutes. Then, add in the potatoes and leave to cook for another 5-10 minutes so the excess water from the leeks and potatoes evaporates.
3). The next step is to add the water. Add enough water so it covers all the ingredients and leave to boil with the lid on for anything between 30-40 minutes. If you would like to add extra flavour, feel free to add a vegatable stock cube as well.
4). After it has boiled, check to see that the potatoes are not hard and then, blend the soup together until it is perfectly smooth. Then, add in the cream and stir well.
5). When serving, add croutons and a little bit of sweet paprika just for a final touch. While this is optional, I highly recommend it. I hope you all enjoy it!
