Tortilla Shell Summer Salad

Ingredients:

2 Green Peppers

2 Red Peppers

1 Ripe Avocado

1 can Corn

1 Red Onion

1-2 Wholemeal Wraps

5g Raisins

1 Lime

1 Lemon

10g Parsley (optional)

Regardless of the time of year, it’s never a bad time for a refreshing summer salad. Here we have a purely vegetarian dish, which can easily feed more than 2-3 people for under £5! It is so simple, the most difficult part is simply chopping up the vegetables. Here are the steps:

1). Wash all the vegetables well. Finely chop the peppers, onion and avocado.

2). Add them to a mixing bowl along with the raisins, corn and chopped parsley.

3). Now time for the dressing: add olive oil, chili sauce, sweet paprika, a touch of honey, nutmeg (and mustard if you wish) and mix well with all the ingredients.

4). In the meantime, preheat the oven to 180 degrees. In a low round-shaped pan or metal bowl, coat with oil around the sides and fit the tortilla wrap inside. Bake for 10 mins and then rest out of the oven for another two minutes.

5). By this point, the wrap will be nice and crispy in the shape of a bowl and assemble by filling it with the ingredients and finish off with some cottage cheese on top. Bon appetit!
