Tuna Steaks w/ Spinach & Leeks
First, start dealing with the tuna. As we are dealing with frozen tuna, you can choose to defrost before cooking but often, you can place them straight into the pan. So, heat a frying pan on a high-heat and add a touch of olive oil. Place the tuna steaks inside. At first, it will be noisy and a bit messy and the pan gets rid of the ice and remaining water. Once you see the ice going away and the tuna gaining some colour, it is time to add the spices on top of the steak. Lift the steak slightly to see if it has enough colour on the bottom. If it is nice and brownish, turn the steak over, add replicate the addition of the spices on the that side too. Cook for 2-3 minutes on that side.
While the tuna is cooking, clean very well and chop finely the leek. Meanwhile, finely chop the onion and garlic. Also, have the frozen spinach handy for when you need it. Once the tuna is ready, remove from the pan and leave to rest. In the same pan, retain the heat and add the spinach first. Once the water has evaporated, add the onion and garlic a couple minutes before adding the leeks and leaving to cook for roughly 5-6 minutes. Add a good amount of salt/pepper along with the cumin. Mix together, taste and if to your liking, remove from the heat. Serve the greens on the bottom with the tuna on top. Break the tuna with your hands to make your life simpler. We hope you enjoy!
Note: If you are using fresh tuna steaks, simply rub the steaks with the spices and then add to the pan and cook. This recipe uses fresh tuna when calculating the overall price.
