Green Lentil Salad

Ingredients:

1/2 cup (80g) Green Lentils

1 Dry White Onion

1-2 Spring Onions

2 Beef Tomatoes

Juice from 1/2 Orange

Salt/Pepper

This is super straightforward to make and is done in minutes unless you have bought lentils that require boiling. If so, then simply start by boiling the lentils for 20-25 minutes. Taste the lentils after that time to make sure they are cooked but still a bit al dente. If you are using preboiled, tinned lentils, then simply throw those into a mixing bowl and prepare the vegetables. To prepare the vegetables, simply chop the dry and spring onions finely and the tomatoes in medium-sized chunks. Throw them also into the mixing bowl.

To the bowl, then add a couple tablespoons of olive oil, salt/pepper and juice from half an orange. Mix all the ingredients well and then serve as much as you want in a separate bowl. The rest of the mixture can be retained in the fridge for 2-3 days and is eaten cold, which is delicious! Feel free to add whatever other vegetables you have just sitting in the fridge; carrots, cucumber, anything!
